In the bharli vaangi that I make (or we make in our family anyway), each eggplant is individually stuffed with the wet coconut-peanut stuffing, and that takes some time. Then they are cooked on low/medium heat until they get tender so that the masala does not fall out.<br /><br />I find this dish easier because in this you just make slits in the eggplant, and the gravy seeps in.
